BARBUDA BREAKFAST

I’ve traveled the world and I can honestly say, without any hesitation Barbuda has the sweetest fish on the planet. The coral reef that surrounds the island is virtually untouched and the waters are crystal clean. The dish in the picture is what I ate for breakfast. Fried Parrot fish with green salad, boiled egg whites, and baked dumpling. I’ve tried creating this same dish in Toronto and it doesn’t taste right. It’s hard to replace the freshness of Barbuda fish.
